Escudo Aguila Real tequilas source their agave from a single estate and cook the pinas in traditional brick ovens for a full 3 days and the distillation is done in batch method from copper pot stills. The plata expression is bottled un-aged and generally regarded as the purest expression of agave. They suggest looking for a vanilla note among the cooked agave.
