Tequila: Alquimia Organic Anejo
Alquimia Anejo was named Best Anejo Tequila in the 2013 San Francisco World Spirits Competition (out of a field of ~60 anejo tequilas). The Alquimia anejo is aged for “up to three years” in oak barrels, which is significantly longer than the minimum 1 year required for an anejo designation. They recommend the consumer sip it at room temperature in a cognac snifter to appreciate its long finish.

In pronouncing Alquimia, stress the second syllable: “al KEE mee-uh.” The distillery uses “organic methods” and claims to be environmentally friendly using 100% natural processes and no additives. The brand is owned by optometrist Adolfo Murillo of Oxnard, California. In an interview with the Organic Wine Journal, Murillo describes his commitment to organic production on his Mexican ranch and his efforts to teach other farmers of produce similar methods.

Nose: Fruity, medium oak, with light notes of cooked agave.
Palate: Sweet, fruity, citrus.
Finish: Long, medium oak and vanilla.
