The Plata by Porfidio has been created with the blue agave purist in mind and bottled fresh after distillation without the presence of wood aromas. Specifically, the spirit is not naturally mellowed through a multi-yer process of wood barrel aging and therefore preserved in its original state. It has a greatly reduced methanol content, which results in added smoothness. This is caused by cold-pressed agave juice, rather than hot-pressed agave juice, so that the hydrolization process can happen enzymatically. This is a versatile and un-aged distilled spirit.
